It's no secret, it's the season of the pumpkin! Why not mix a little pumpkin and sweet potato puree into a doughnut your children will love! Trust me, this recipe is kid-approved and full of Vitamin A as well as fiber and many other nutrients. There are many versions of puree doughnut recipes online, this one is my favorite!
Ingredients
1/2 cup brown sugar
1/2 cup pumpkin puree (canned pumpkin is a-ok!)
1/2 cup sweet potato puree
1/2 cup milk
1 egg white
1 tbsp butter
1 tsp vanilla
1 cup all purpose or whole wheat flour
1 tsp baking soda
1/2 tsp baking powder
1/2 teaspoon pumpkin spice
Directions
Preheat oven to 350°F. Coat a doughnut mold with cooking spray.
In a large bowl, mix brown sugar, pumpkin puree, sweet potato puree, milk, egg white, butter, and vanilla. Mix together in a separate bowl the flour, baking soda, baking powder, and pumpkin spice. Mix all ingredients together in the large bowl.
Pour the batter into a gallon-sized plastic bag, cut the bottom tip off of one side of the bag. Squeeze the batter through, into the doughnut mold. Bake until the tops are lightly browned and a toothpick comes out clean when inserted, 20 to 25 minutes. Place doughnuts onto cooling rack. When cool, dust with confectioners’ sugar.
