What I love about Delicata squash? Edible skin, creamy and savory. Perfect simple recipe you can make on a Sunday, and enjoy all week.
Ingredients
3 small Delicata squash (can substitute with acorn or butternut squash)
12 oz of ground beef, turkey, chicken or tofu
1 large diced tomato
1 large diced red onion
½ cup shredded Mexican cheese blend
Preparation
Cut squash in half
Roast on 400 degrees, skin side down – until tender, approx. 15 minutes
While squash is cooking, brown ground beef, drain
Remove squash from oven, scoop out seeds, let cool
Scoop 2oz of ground beef (or protein of choice) into each squash boat
Top with cheese, tomato and onion
